I've been at MSOE for 3 years now and have taught a wide range of classes across two departments primarily to students getting a B.S. in User Experience. In addition to teaching a 4-4-4 schedule (4 courses each for 3 ten week terms) I have also developed a number of courses. I pull on a wide range of resources for designing new courses but in particular I've been helped significantly by Kerry Rodden (Code for America), Kristy Cyffka (Google), and Amanda Pype (Google). I also regularly search for syllabi of similar classes online and found this article from Evan Peck (Bucknell) to be particularly helpful as well as the archived Data Visualization Pages from Michael Gleicher (UW Madison). In general I believe strongly in sharing resources to inspire others and work in community. Hence my sharing here. If there's anything here you'd like more information on, please reach out.
